The Parable of the Caramel Corn

At this time of year my thoughts are turned to love, caring, kindness and caramel corn.

Years ago during the holidays my Grandma Thompson made me a big bag of caramel corn and sent it to me. She makes the very best caramel corn. It is sticky and gooey. You will never taste better caramel corn. Words cannot adequately express how much I love this caramel corn (sprinkled with a little salt). This large bag of caramel corn held a prominent place on our kitchen table.

The day that I received the caramel corn I received a call from my brother. He lived in another state and was visiting our Dad in Utah for Christmas. He was going to stop by with my sister-in-law and visit us. It was a nice surprise. We weren't expecting a visit so soon and we frantically started cleaning. I spotted the caramel corn and asked Zach to hide it. As much as I love my brother and sister-in-law, I didn't want to share the caramel corn. They love it as much as I do and if I shared it with them it would disappear in a nanosecond.

We had a nice visit and they left. We forgot about the caramel corn. Many months later I was cleaning under my bed and found a bag of old dried up dusty caramel corn. YUCK! I sat in a stunned stupor. What a tragic waste.

If I had shared my caramel corn many people would have been able to enjoy a little bit of a delicious treat. However, due to my selfishness, nobody enjoyed any of the caramel corn.

Ingredients:
½ Cup butter
1 cup light syrup
1 lb. (2.25 cups) brown sugar
1 can sweet condensed milk
2 or 3 gallons popped corn


Directions:
Put butter, syrup, & sugar in Saucepan & boil for 6 minutes (or soft ball stage).

Remove from heat and stir In Condensed milk vigorously.
Pour over popped corn and stir & spread out on aluminum foil.

Sprinkle with salt.
